Matar Khumb Masala ( Mushroom and Green Peas Masala)

Mushroom Matar is another delectable dish  which  has a high nutrient value. Delicious mushrooms and sweet green peas cooked in a spicy tomato, onion loved by many Indians. 
I think there are a lot more  recipes which i need to try with mushrooms hmmm so till then you guys try this tested one and i  will experiment more on it and come up with more tried and tasted recipes..:)




  • Ingredients:

  • 1 cup mushroom
  • 1 cup peas (frozen /fresh)
  • 2 onions medium sized finely chopped
  • 3 tomatoes pureed
  • 1tbs ginger-garlic paste or freshly grated
  • 1 tsp dhania powder
  • 1 tsp cumin seeds
  • 1-2 tsp chilli powder 
  • 1tsp garam masala pwdr
  • 3-4tbsp oil
  • Salt to taste
    • Method:
    1. First things clean the mushrooms nicely and slice them into 2 pieces. Boil Mushroom and green peas.
    2. Heat oil in a pan and add ginger/garlic paste.
    3. Now add the onions, fry them untill they r light brown. Add salt as required.
    4. Then add the tomato puree  and  add the spices and cook till oil seperates from the mixture.
    5. You can now add mushrooms and matar(peas). Fry them for 5-10 minutes.
    6.  If u need a gravy kind u can add 1 cup of water to it and cook further.
    7. Garnish with cilantro and serve with Chapatis or Naan.

    Tip: Cut the mushrooms only when you are ready to put them in , coz they will turn black when contacted with air.

Tangy Green Apple Salad


Just think fresh, tangy, crunchy green apple,  sweet and sour …  I’d say we have a great combination here! I liked it very much And nothing is better than a deliciously healthy salad to pick up your spirits.





Ingredients
  • One medium Green apple or Granny Smith
  • One medium (50g) shallot (Small Onion)
  • 4-5 Baby tomatoes, cut into long pices
  • Lime juice, to taste
  • 2-3 Garlic Cloves (grated) 
  • Dried red pepper powder, to taste
  • About 2-3 tablespoons of chopped cilantro (Corriender) leaves


Method

1. Cut the apple and Slice each half lengthwise into thin slices. Make stacks of 4-5 apple slices.
2.Heat oil in the pan, and put onion slices in it. Let it get golden brown and remove onions from oil. keep it aside.
3. In a mixing bowl, toss together the green apples and tomatoes and garlic (grated) 
4. Season with lime juice, dry parsley and dried red pepper powder.
5. Garnish with coriander and fried golden brown onions in it.
6. Serve with light salt.

Variations: We can add sprouted mung dal, lettuce leaves.


Colourful Barwan Paneer (Stuffed Paneer)

This is inspired by Master Chef participant Khoku's recipe. I had tried this Bharwan Paneer  - With Creamy Gravy. It was so good that since then I ever make paneer at home it has to be that. Paneer and Bell Pepper are the greatest combination. 



How to make Bharwa Paneer.

Ingredients:
250g - Paneer
1 no. - Yellow / Red Bell pepper
100gms - Fresh Cream 
2 Tbsp - Ginger Paste
2 nos. - Tomato
1 Pinch - Dal Chini
1 Tbsp - Haldi Powder
1 Tbsp - Red Chilli Powder
100gms - Oil
1 Tbsp - Kaju Paste
1 Tbsp - Salt
1 Tbsp - Kasuri Methi

Method:

Soften the paneer by using your fingers and then add salt, haldi, kasuri methi and mix it gently. 
Cut Bell pepper roundels and clean the core of it. Stuff the paneer mix in bell pepper roundels. 
Shallow fry these rings.

For Gravy:
Heat oil in a pan, add ginger paste, haldi, tomato puree, dalchini powder and cook until it leaves the sides of the pan. Once the gravy is made, pour it on fried paneer roundels. Add cream, kasuri methi and salt for garnish and serve hot.
